I have always LOVED baking, whether it’s following someones recipe or making up my own I just love it! I currently bake every Tuesday night for our lacrosse matches on Wednesday and last night I baked some rocky roads and then some brownies.
I completely experimented with these brownies and have created the most gooey yummy treats! I’ve always said I’d love to be a female Willy Wonka because some of my chocolate creations are way over the top chocolatey and binge worthy and I experiment with combinations that shouldn’t work together but they just do!
Tanya Burr inspires me all the time with her incredible recipes, I think I have actually baked everything in her book and everything is completely delicious, so these brownies were inspired by her but I expanded on her take and made them my own.
Here is the recipe:
300g dark chocolate (I like to use Bournville Dark Chocolate)
300g golden caster sugar (or normal caster sugar is fine too)
A drop of vanilla extract
160g plain flour
60g cocoa powder
1 tin Carnation caramel (I often use a little more than one tin)
150g white chocolate chips
150g Milk chocolate chips
To start with you need to preheat the oven to 180°C and line a baking tin with greaseproof paper.
Now for the fun part! I’m a very lazy baker and I don’t like to wash up lots of pans and bowls etc. so I will only ever use one pan in this whole process.
Get your pan and put it on the scales and set to zero, then way out your butter and dark chocolate and melt in the pan. I know a lot of people say to do it in a bowl over simmering water but this works perfectly too, just make sure you keep stirring so the chocolate doesn’t burn.
Next take the pan off the heat and stir in the sugar, leave the mixture to cool for a little bit before adding in your eggs as you don’t want them to curdle. Once cool, add in the four eggs and stir until the mixture becomes smooth.
Put the pan back on the scales and set to zero.
Next way out your flour and cocoa powder and fold that into the mixture, being careful not to knock out too much air!
Get your prepared baking tray and pour in half the mixture (dont worry if it doesn’t cover the whole pan to start with, it will by the end!
Sprinkle evenly half the white chocolate chips over the mixture.
Spread the caramel evenly over this.
Sprinkle the caramel with some sea salt, I use quite a lot, but it’s personal preference.
Next get your marshmallows and evenly spread these over the caramel
Lastly get the rest of the white chocolate chips and sprinkle these over the top of the marshmallows.
Now pour the other half of the mixture over the top and spread it evenly.
Lastly get the milk chocolate chips and sprinkle these over the top to finish it off.
Bake in the oven for about 20 minutes, you may need to leave them in a little longer.
When they come out they may look VERY gooey but leave them to cool for a couple of hours and they should be absolutely fine.
